CC : Central Control System

The control system of the brewery and brewhouse – central control (CC)

Manual control of the brewhouse with the support of PLC with most operations controlled from the central control panel with controls and sensing elements. The control panel is designed as a touchscreen or mechanical switches and controllers – centrally are controlled motors, heating and transfer ways.

II. CC – central control – manual controlled brewhouse with PLC support

Quantities of display and control on the control panel :

  • Lightning of the brewhouse on / off
  • Motor of the boiler – frequency controlled, stepwise adjustable speed
  • Motor of the strainer – frequency controlled, stepwise set speed
  • Mash – lauter pump – frequency controlled, stepwise adjustable speed
  • Wort pump – frequency controlled, stepwise adjustable speed
  • The boiler temperature – display, control – step adjustable (the computer starts heating in the brewhouse, if the temperature of  works sensed by a sensor is lower than the set)
  • Temperature of the mixed water in the mixer – display, control – step adjustable (after storage temperature is set the computer controlls servo valves for hot and cold water)
  • Wort temperature after the heat exchanger – display, control – step adjustable (after storage temperature is set the computer controls the speed of the wort pump and the pump of ice water)
  • The water temperature in the hot water tank (boiler) – display, control (the set temperature starts heating in the boiler if the temperature of works sensed by a sensor is lower than the set)
  • The water temperature in the tank of ice water – display (sensed by a sensor in ice-water tank)
  • The level in the tank of hot water – display ( according to data from the gauge in hot-water tank )
  • The level in the tank of ice water – display (according to data from the gauge in ice-water tank)
  • The level in the whirlpool tun – display (according to data from the gauge in WT)
  • The set of routes of used pipes in the brewing cycle (remote opening and closing of valves)
  • Opening / closing the servo valves of showers of the capacitor of secondary steam – regulation
  • The cumulative flow of mixed water – digital flow meter (set the desired amount of water, automatic dosing the set quantity of filling water)

 

Quantities on display outside the control panel:

  • The water temperature in the tank of ice water – (pointer thermometer)
  • Temperature of the water / steam in the condenser of secondary steam (pointer thermometer – redundantly)
  • Level in the hot water tank (outer glass tube level gauge – redundantly)
  • The level in the tank of ice water (outer glass tube level gauge – redundantly)
  • The level in the whirlpool tun (outer glass tube level gauge – redundantly)
  • Haze of works, fresh wort, wort – through sight glasses

 

Automatically controlled:

  • Heating of the glycol heater depending on the temperature of the kettle and boiler (the control panel of the brewhouse):
  • Heating capacity of the glycol heater
  • Pump of the glycol heater
  • 3- way valve of the glycol heater
  • Flaps of the glycol heater
  • Mixing hot and cold water according to the desired temperature of the mixed water

 

Manually controlled:

  • Less frequently used flaps and valves – manual settings of pipeline routes
  • Stroke of the raising device – step adjustable – pneumatic control with air valves or mechanically
  • Control of chimney dampers – the flap lever
  • The spreading malt – by hand from bags through the inspection door
  • The spreading of hops – by hand from the bag through the inspection door
  • Monitoring times – ” kitchen ” clock with a bell (it does not switch on or off anything)
  • Manual central STOP

 

Saved in the computer memory:

  • The history of the temperature settings, remotely operated valves and valve speed of pumps and motors, discharges and total volume – all on the timeline by individual batches .
  • Recording starts automatically with every execution of events from the control panel.
