The brewery has a simplified brewhouse with construction what allows beer production from wort concentrates. It does not allow beer production from traditional raw materials (malt, hops and water).

Characteristics of microbrewery MOBBEER LITE WC

Suitable solution for small breweries that do not need brewhouse dominates the space for guests, but the owner wants to brew beer effectively, energy and time most economicaly way, or without employing a qualified brewmaster. Compared to traditional brewhouse arrangement, MOBBEER Lite WC does not allows beer production from the traditional raw materials or malt extracts. It is only for brewing beer from wort concentrate which is a product whose stirring in cold water can be obtained ready wort. This eliminates all hot phases of the brewing process, the wort is ready in about 1.5 hours. Production process after obtaining the wort continues with transfer cooled wort in the fermentation vessel. In one day can trained person quickly produce up to 6 batches of wort. Wort concentrate is also easy for transport and storage, resulting in further cost savings in the operation of breweries operating in distant lands. Currently we supply wort concentrate for the production of bottom fermented light and dark beer. Fermentation and maturation takes place in sealed cylindrical-conical tanks or in open fermentation tubs.

What is wort concentrate?

Czech lager beer eort concentrate VUPSWort concentrate is obtained from the beer wort, what is saccharine intermediate product formed in the first stage of the technological process of thebeer production. It contains extractives from malt which are fermentable and extractives from hops. After the brewing process the wort is concentrated in technologically unique evaporators when is reached evaporation temperature about 45 °C, which does not damage the main component of the extract – malt sugar or caramelization. It is a natural way of preservation and obtaining wort concentrate.  Wort concentrates are produced without using any chemical additives (extraction agents, artificial enzymes, preservatives, slabilizátorů, dyes, etc.). Wort is produced by infusion or decoction method of different types of malt, hops and drinking water by professional brewmaster. It usually has the consistency of honey or powder and a shelf life is 6-12 months. Easily transported and stored in airtight packages.

Closed fermentationMicrobreweries MOBBEER LITE WC CF

Fermentation and maturation in sealed cylindrical-conical tanks is an effective and modern way of producing beer, which is highly resistant to contamination of fermenting beverages with unwanted organisms. Precision control of the fermentation and maturation leads to permanent results of constant quality and sensory characteristics of the beer. This scheme of brewery is particularly suitable for the production of top-fermented beers, but it is possible to produce all types of bottom-fermented beer too.

Open fermentationMicrobreweries MOBBEER LITE WC OF

Fermentation and maturation in open fermentation vats is the traditional way of producing beer, especially for the typical bottom-fermented Czech type of beer . This allows collection of quilts during the fermentation. A fascinating look at many forms and colors of the yeast foam will be appreciated by guests on excursions to the brewery. This scheme of brewery is suitable only for the production of bottom-fermented beers. Production of top fermented beer in open fermentation vats is quite demanding and is therefore not recommended.

Open and closed fermentationMicrobreweries MOBBEER LITE WC OCF

The combined solution enables production of bottom and top-fermented beer. Microbrewerie contains of open fermentation tubs (optimal for the traditional method of bottom-fermented beers) and cylindro-conical tanks (particularly suitable for the production of top fermented beers). Beer maturation takes place in lager tanks, or it is possible to use instead of lager tanks other cylindro-conical tanks for maturation process. The solution particularly suitable for restaurant minibreweries where the brewer plans to manufacture both bottom and top fermented beers.

CONTROL SYSTEM FOR BREWERY MOBBEER

Control system for brewery BreworxI . Control system level MC (manual control):

A manual control of a brewhouse, simple push-button control panel with basic control and sensing elements. Manually adjusted pipeline routes, switching of motors and pumps, temperature and times are watched by the brewer .

II . Control system level CC (central control):

A centrally-manually operated brewhouse with support of PLC with most operations controlled from central control panel with controls and sensing elements. The panel is designed as a touchscreen or mechanical switches and controllers – from there motors, heating and setting routes are centrally controlled.

III . Control system level SA (semi-automatic control) :

An semi-automatically controlled brewhouse – with most computer- controlled operations – according to the specifications from a central control panel. The control panel is designed as a touchscreen. The brewer selects the recipe and starts the program that controls the production process. The brewer controls it and performs laboratory tests, treats abnormal conditions and ensures the preparation and the brewing of raw materials for the process.
