Description of the BREWORX OPPIDUM brewing machine

Industrial brewery Breworx OppidumA powerful compact industrial brewhouse, designed for the production of all kinds of beer wort by the infusion and decoction way of mashing. It consists of six tanks, which together with the platform, stairs, a control panel, tubing and plate cooler make one block. The first tank acts as a mash basin, the second tank as the lauter tun, the third tank as the wort pan, the fourth tank as the whirlpool tun. The fifth and sixth are auxiliary tanks and can be installed separately from the brewhouse – a hot water tank with integrated heat exchanger for heating of water and a tank for ice water with integrated heat exchanger for cooling of water.
The heating of mash tank and wort boiler is provided by the steam generator, located separately from the brewhouse. Steam, coming into the side and bottom of the jacket of mash and wort pans, allows optimum heating rate of works or wort of 1 ° C / min. Straining is forced by a wort pump. The stirrer of the straining tank has a pneumatic vertical throw. The brewhouse has a control panel and a basin with a cooler for samples.

In the distribution system of the brewhouse there is a convertor (for a precise blending of hot and cold water), mash pump, wort pump, fresh wort pump, hot water pump, cold water pump, CIP pump and single-stage full stainless plate cooler of wort. Heat is recuperated by heating the water in the hot water tank during cooling the wort and the subsequent use in another process or sanitation is considerable saving of water and energy.

For the next stage of using heat from the brewing process, you can optionally provide by fitting the brewhouse with a capacitor of secondary steam with recuperation. Cooling of the wort is in the single plate cooler, which is the part of the brewhouse.

The solution of the brewhouse allows continuous production of up to 6 batches of beer at a time, as each production stage of brewing process takes place in a separate container. Thus it is possible to produce up to 6 brews for 24 hours in a continuous production process.

We deliver microbreweries BREWORX Oppidum for brew volume 10 HL – HL 40. Total annual production of microbrewery depends on the cooking schedule, the number and type of fermentation and maturing vessels, number and type of service tanks, the selected range of beers and other parameters. The maximum brew volume of the brewery BREWORX OPPIDUM can be up to 60.000 hectoliters of beer per year.

Brewhouse Description

czech-product-001The brewhouse is the main part of each brewery. It is a food machine whose primary function is the production of beer wort. The wort is an intermediate product. The next phase of the production cycle is fermentation and maturation of wort. This raises the final product – beer.

The singleblock brewhouse BREWORX OPPIDUM is a compact industrial machine which includes all necessary equipment to produce 1000-4000 liters of beer wort in one batch. It is six-vessels brewhouse wherein containers are connected by common service platform. This we have achieved full functionality brewing while we retained the traditional design of the Czech type brewhouse which is ideal for producing of world-famous Czech type beer. However, this brewhouse is fully capable for manufacturing all types of beer, which is produced anywhere in the world. Thanks to that the brewhouse enables the production of up to 6 batches of wort (12.000 liters of wort) for 24 hours

Options and properties

 

Two raw materials for production of beer wort :

  • Classical raw materials : Malt + hops + drinking water + brewer’s yeast + (optionally other ingrediences)
  • Beer concentrates : Malt extract + hops + drinking water + brewer’s yeast + (optionally other ingrediences)

Four production capacities of the brewhouse :

  • 1000-4000 liters of beer wort per day – one batch for 12 hour – source raw materials are malt or malt extract, hops, drinking water and brewer’s yeast
  • 2000-8000 liters of beer wort per day – two batches for 24 hour – source raw materials are malt or malt extract, hops, drinking water and brewer’s yeast
  • 3000-12000 liters of beer wort per day – three batches for 12 hour – source raw materials are malt or malt extract, hops, drinking water and brewer’s yeast
  • 4000-16000 liters of beer wort per day – four batches for 24 hour – source raw materials are malt or malt extract, hops, drinking water and brewer’s yeast
  • 5000-20000 liters of beer wort per day – five batches for 24 hour – source raw materials are malt or malt extract, hops, drinking water and brewer’s yeast
  • 6000-24000 liters of beer wort per day – six batches for 24 hour – source raw materials are malt or malt extract, hops, drinking water and brewer’s yeast

 

Practical design :

BLMS – Brewlock mainholes system

  • SJ – Stainless steel J-design – all vessels are fully made of stainless steel AISI 304, arrangement of containers into the J-shaped
  • SC – Stainless steel C-design – all vessels are fully made of stainless steel AISI 304, arrangement of containers into the C-shaped
  • BLMS – Brewlock mainholes system – one hand lock-unlock system on all upper mainholes (with the glass design)

 

Powerful heating systems :

  • SH – Steam heating – the heating of kettel is performed by hot steam produced by steam generator. Heating by hot steam significantly speeds up the boiling process and it is better for the heated wort (no caramelization of malt). This system requires a connection of the brewhouse to electric, gas or pellet steam generator that is not included in the brewhouse (see an optional accessories).

 

Two available control systems :

  • MC – Manual controlmanual control of a brewhouse, simple push-button control panel with basic control and sensing elements. Brewer manually adjustes pipeline routes, switching of motors and pumps, sets all temperatures and watches all times.
  • AC – Automatic control – brewhouse with computer support – the automatically controlled hot process of brewing – fully automatized management of the entire processes of production beer wort.

Oppidum automatic control system

The brewhouse Breworx Oppidum produces several batches of wort at the same time. This is very demanding of attention, concentration and speed of brewer work. Only computer brewhouse automatic control system always ensures the right brewing operations timing without damaged wort batches.

  • ICWT – Ice cooling water tank – insulated vessel for cooling, storaging and pumping of ice water which is necessary in wort cooling process. This treated drinking ice water is heated in wort cooling process and then is comming back to the cooling system. Available for breweries with two-level wort cooling system – we recomment it for brewhouses with production capacity max.1000 liters of wort per one brew instead ITWT.
  • WTS – Water treatment systems – equipment for treating of cold water that has not requested chemical composition available for brewing of choosed type beer. It is needed a chemical analysis for assessment of suitable water chemical composition.
