PASTEURIZACIJA PIVA

- rešitev za podaljšanje roka porabnika piva, zlasti za velike pivovarne

Pasterizacija piva je kratek dvig temperature pijač pri temperaturi, ki povzroči uničenje športnih patogenih, pa tudi koristnih organizmov človeškega telesa. Med pasterizacijo pijač steriliziramo. Izvaja se na napravah, imenovanih pasterizatorji (včasih uporabljamo izraz »pasterizatorji«).

 

 

Pri proizvodnji piva obstajajo štiri vrste pasterizatorjev:

Kopalni pasterizatorji

Steklenice ročno postavite v vodno kopel in temperaturo in čas pasterizacije lahko nastavite prek digitalnega prikazovalnika. Potem se steklenice ročno odstranijo iz kopeli.

Pasterizatorji v komori

V komoro so nameščene polnjene in zaprtih steklenic, temperaturni nivo in trajanje lahko programirate z digitalnim krmilnim panojem, čas ogrevanja in čas hlajenja pa je mogoče prilagoditi. Čas pasterizacije je običajno ena ura, po kateri se postopek samodejno izklopi.

Pasterizacija piva

Pivo vodi iz Dovodni rezervoar z visokotlačnim črpalko v rezervoar za zasičenje. Ta posoda je napolnjena z ogljikovim dioksidom (CO2) in ima stalni konstantni tlak v barvi 7-10. Stopnjo nasičenja se lahko regulira s tlakom. Pivo je obremenjen s tlakom posode sesalca v regenerativni toplotni izmenjevalec, kjer je pivo predhodno segreto. Potem se pivo usmeri v toplotno pasterizacijo in hranilnik, kjer poteka pasterizacija. Potem se pivo izvaja v drugi regenerativni toplotni izmenjevalec. V naslednji fazi se pivo zadrži v hladilnih enotah, kjer se ohladi na temperaturo, primerno za polnjenje.

Prednost Pretočni pasterizator Je manjša poraba toplote zaradi učinkovitosti predelave, poleg tega pa zahteva manj prostora, ki ga pasterizacijska oprema zaseda.

Pasterizacija tunela piva

Steklenice se pošiljajo po posebnih Izoliran tunelski transporter kjer so Tuširana z vročo vodo V treh pasovih (območje predgrevanja, območje pasterizacije in hladilno območje). Pod transportnim trakom so kadi z vodo. Med predgrevanjem in hlajenjem se izvede rekuperacija toplote. Ogrevanje je lahko električno ali paro. Hitrost transportnega tunela je nastavljiva, temperatura pasterizacije se samodejno vzdržuje.

Prednost Pasterizator tunela Je trenutna sterilizacija ne samo pijač, ampak tudi površina steklenic. Slabosti so večja poraba toplote in uničenje velikih količin pijač (ustekleničene, ki so trenutno v predhodnem segrevanju pasterizacijskega območja), ko se črta zaustavi zaradi napake.
