什么是微宏观氧化？

氧化-碳酸化-喷射-坦克-适配器-500x500宏观氧化 – 在发酵开始时：加强酵母细胞及其再生细胞。 每个酿酒商、苹果酒制造商或酿酒商都担心由于酵母细胞的削弱而导致发酵停滞。 Macro-ox在这个阶段有助于培养强大的酵母细胞，可以很好地进行发酵直至完全结束。 有助于稳定红酒的颜色和啤酒的口感。

微氧化 – 发酵后：改善葡萄酒的香气和风味，在桶中同化陈酿，更好地控制氧气量。 氧气结合单宁
（酚类）稳定葡萄酒的颜色并赋予其更饱满的风味和口感。
葡萄酒氧化可以提高啤酒质量。

宏观氧化 – 在啤酒、苹果酒或葡萄酒的发酵开始阶段：对酵母具有与葡萄酒相同的有益效果。

喷射氧化（CLIQUAGE） – 在发酵开始时将氧气喷射（喷射）到罐中，以获得与 Maco-Ox 类似的效果。 数量由操作员手动控制。

这个怎么运作 ？ 为什么要在啤酒厂/苹果酒厂使用氧化工艺？

宏观氧化 – 在发酵开始阶段：对酵母的有益效果与在葡萄酒中相同。

宏观氧化仅在发酵开始时进行，以在开始繁殖时加强酵母。 酵母消耗氧气和糖分作为营养，产生酒精和热量。 只要罐中有氧气，它们就会在有氧条件下繁殖并再生更大更强的细胞，从而使发酵达到更好的效果。 酵母细胞疲倦且未完成发酵的风险大大降低。

没有获得额外氧气的酵母，很快就会消耗掉罐中的所有氧气，并开始无氧繁殖。 再生的细胞更小更弱。 同时，它们开始产生对它们有害的酒精，因此在没有添加氧气的酒精存在下，再生速度较慢且较弱。

氧气量由酿酒商自己决定，根据他的经验、酿造批次大小、啤酒类型和他使用的酵母。

碳化石-02曝气、充氧和碳酸化石用于：

  • 将啤酒从啤酒厂运输到发酵罐的过程中，麦芽汁在涡流后的氧化作用
  • 饮料罐或管道中的氧气、二氧化碳或空气使饮料饱和。

 

 

罐中成品饮料的碳酸化

碳酸饮料是一种带有二氧化碳气体的气泡和嘶嘶声的饮料。 气体溶解在饮料中的过程称为碳酸化。 这个过程可以自然发生，例如在从地下吸收二氧化碳的天然碳酸矿泉水中，或者通过人造过程，就像大多数软饮料和苏打水一样。 这包括在高压下将二氧化碳泵入饮料中，然后密封容器。 由于二氧化碳在较低压力下的溶解度较小，因此当容器打开并释放压力时，溶解的气体会以气泡的形式逸出。

碳化过程是使用碳化石提供的 - 罐内带有多孔扩散器的特殊射流（由烧结不锈钢 AISI 304 或陶瓷石制成）。
